CHILLI BEEF STIR-FRY WITH UDON NOODLES
Who doesn't love a stir fry! This recipe was created by another foodie buddy I recently made. Simply Monique has the purest soul, funny, is just as overdramatic as me and to top it off an amazing cook! Using The Black Stuff Monique made this tantalising number which has the perfect balance of heat and flavour.

Cook time: 15-20 mins
Difficulty: easy
Serves: 4-5 people
INGREDIENTS
1 lb beef (strips)
3 sprigs of spring onion
1 tbsp The Black Stuff (to taste)
3 tbsp veg oil
1 small onion
2 sweet peppers (green & red)
1 tsp grated garlic
½ tsp grated ginger
udon noodles (600g pack)
2 ½ tsp cooking wine
3 tsp soy sauce
½ tsp oyster sauce
1 tsp corn flour
Sea salt (to taste)
Black pepper (to taste)
1 ½ cups water
Begin by washing the meat
Then lightly season and set aside
Heat 2 tbsp of oil in a wok on a medium heat
Drop a small amount of garlic and ginger into the oil (for added flavour)
Add the meat strips and leave to brown
Start thinly slicing your vegetables
Stir the meat to ensure that all parts of it has been cooked
Once you are sure there’s no longer any pink, you can remove the meat from the pot and set aside
Add 1 tbsp oil to the wok and the sliced veggies before leaving to sauté for a few minutes
In a bowl place the noodles in some cold water to separate (you can do this manually if you prefer)
Once the veggies have sweated and still have a slight crunch you can add the meat back to the pot
Begin to season (salt, black pepper, oyster sauce, cooking vinegar, soy sauce)
In a cup vigorously mix cornflour and water together
Then add the noodles to the wok and stir everything in
Add the cornflour mixture and remaining water
Then leave to cook for a further 5 minutes
Take a fork and taste test it, if you love it remove it from the fire
Finally enjoy!
