Shito Salmon Burgers

This innovative dish using The Black Stuff aka Shito was made by the talented @koffsseatss. The Black Stuff traditionally from Ghana goes amazingly with fish and yams so this creative meal just takes this tasty hot sauce to the next level. Serves 8 people


1 Half Side of Salmon

The Black Stuff aka Shito

1 tsp Paprika

1 tsp Chives

1 tsp Thyme

1 Egg

1 tbsp Garlic

1 tsp Chilli Flakes

3 tbsp Breadcrumbs

1 tsp Olive oil

Rocket Leaves


Brioche Buns

1. Cut or Chop Salmon into chunks using a knife or Food Processor

2. Add in all the spices to the salmon and mix

3. Add in 2 tbsp of The Black Stuff ™ and mix

4. Add in 1 tsp Lemon Juice, 1 egg and 3 tbsp Breadcrumbs

5. Carefully Scoop 1 large tbsp of the salmon mix & roll gently into a ball and flatten slightly - do not flatten too much as it will become too thin when frying

6. Chill in the fridge for at least 2 hours

7. Heat 1 tbsp Olive Oil in a frying pan

8. Fry till cooked (5 mins on either side) and place in lightly toasted brioche bun with rocket leaves and mayonnaise. Perhaps add and extra helping of The Black Stuff if you're daring!
