Like most kids I saw veggies as the enemy; tried every trick in the book to avoid eating them. As I got older (and a little wiser) I developed a love for a good salad and loved making vinegrettes and dressings to go. Using the naturally cool cucumber, this refreshing sauce is great with salads, fish and seafood or as a party dip with salsa!
