Crispy Golden One Sardines on Toast

These crispy Golden One sardines are the kind of thing you make once, then immediately add to the rotation. Crispy, savoury and full of flavour, served on sourdough over a fresh tomato and red onion base and finished with spring onions.

Ingredients

For the sardines
  • 2 tins sardines in olive oil
  • 1–2 tbsp The Golden One
  • Zest of 1 lemon
  • Squeeze of fresh lemon juice
  • Salt, to taste
For the fresh topping
  • 1 tomato, finely diced
  • 1/4 red onion, finely diced
  • 1 small garlic clove, finely chopped
  • Small handful fresh parsley, chopped
  • Spring onion, sliced
  • Squeeze of lemon juice
  • Salt, to taste
To serve
  • 2–4 slices sourdough or bread of choice
  • Olive oil, for toasting

Instructions

Prepare the sardines Drain the sardines, reserving a little of the oil. Add the sardines to a lined baking tray with The Golden One, lemon zest, lemon juice and salt.

Mash and bake Mash everything together with a fork, then mix through a little of the reserved sardine oil. Press the sardines down and spread them out into one even layer across the tray. Bake at 200°C for around 15 minutes, until the edges are golden and crispy. When you start to flake the sardines with a fork, you should hear that satisfying crisp.

Toast the bread Drizzle the bread with a little olive oil and toast until golden and crisp.

Make the fresh topping Combine the tomato, red onion, garlic, parsley and spring onion. Season with lemon juice and salt and mix well.

Build the toast Spoon the fresh tomato mixture over the toasted bread, then pile the crispy Golden One sardines on top.
Best served when lunch needs to be quick but still hit properly. Best served with Pepper Pots.
