Prawn & Egg Fried Rice with Tino Shito

Quick prawn and egg fried rice with spring onion, served with a generous spoonful of The Tino Shito. Simple, satisfying and exactly the kind of meal that needs a little shito on the side.

Ingredients

  • Cooked rice, preferably chilled
  • Cold-water prawns
  • 2 eggs, beaten
  • Spring onions, sliced
  • Light soy sauce
  • Oil, for frying
  • Salt and black pepper, to taste
  • The Tino Shito, to serve

Instructions

Cook the prawns Heat a little oil in a large frying pan or wok. Add the prawns and cook until just cooked through, then remove from the pan and set aside.

Scramble the eggs Add the beaten eggs to the same pan and gently scramble until just set.

Fry the rice Add the cooked rice and break up any clumps. Stir-fry over a high heat until the rice is hot and beginning to catch slightly around the edges.

Bring it together Return the prawns to the pan, add the spring onions and a splash of light soy sauce, then toss everything together. Season to taste.

Serve with Tino Shito Spoon the fried rice into bowls and serve with a generous spoonful of The Tino Shito on the side.
Best served when you need dinner on the table in ten minutes. Best served with Pepper Pots.
