Perfect for
Crispy roast comfort
Ingredients (serves 2-3)
Main:
- Maris Piper potatoes
- Salted butter
- Olive oil
- Vegetable oil
- Fresh parsley
- Salt
- White pepper
- Black pepper
- Mixed herbs
- 1 to 2 tbsp The Green Meko
Drizzle
Main:
- Olive oil
- Chopped fresh parsley
- The Green Meko
- Salt (to taste)
Instructions

Prep the Potatoes
Peel and cut your potatoes. Boil in salted water until just tender. -
Fluff
Drain the water, then add salt, white and black pepper, mixed herbs and a small knob of butter. Cover the pot with a lid and shake the potatoes gently so they get fluffy around the edges. -
Roast
Preheat vegetable oil in a roasting tray in the oven (200C). Carefully add the fluffed potatoes and roast until golden and crispy. -
Make the Drizzle
Mix olive oil, chopped fresh parsley and The Green Meko in a small bowl.; -
Finish and Serve
Once the potatoes are roasted, toss them in the drizzle. Serve hot with your favourite roast or as a stand-alone snack.
Best served with whatever’s coming out of the oven. Best served with Pepper Pots.
