Our easy recipe combines classic scrambled eggs, smashed avocado, and The Golden One spread on toasted sourdough bread. Life's simple joys – the perfect breakfast or brunch addition.
Ingredients:
3 eggs
2 ripe avocados
Salt (to taste)
Fresh parsley (chopped)
2 slices of sourdough bread
Instructions:
Smashed Avocado:
Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
Mash the avocado using a fork until you achieve your desired level of smoothness.
Season the mashed avocado with salt and chopped fresh parsley. Mix well
Scrambled Eggs:
Crack the eggs into a bowl and beat them with a whisk or fork.
Heat a non-stick pan over medium-low heat.
Pour the beaten eggs into the pan and let them sit for a moment.
Gently stir the eggs with a spatula, breaking them up as they cook.
Season the scrambled eggs with salt to taste.
Continue to stir occasionally until the eggs are fully cooked but still moist. Remove from heat.
Pan-Grilled Sourdough Bread:
Toast the sourdough bread slices on a griddle or in a toaster until they are golden brown and crispy.
Assemble and enjoy!
Spread The Golden One on one side of each slice of grilled sourdough bread.
On the same side of each bread slice, top and spread a generous amount of the smashed avocado mixture.
Top the avocado side with the seasoned scrambled eggs and enjoy while the eggs are still warm
