PERFECTLY FRIED YAMS AND GREEN MEKO

Ingredients

  • The Green Meko

  • 1 large yam, peeled and sliced into strips

  • Vegetable oil for frying

  • Water

  • Salt to taste


Instructions


Prep the Yams:

  • Peel the yams and cut them into rounds or strips, depending on your preference. Try to make the pieces as uniform as possible to ensure even cooking. Wash your cut yam thoroughly.

  • In a large bowl, submerge the yams in warm water and add salt, let this sit whilst your oil heats up.


Heat the Oil:

  • Pour enough vegetable oil into a deep, heavy-bottomed pan or pot to submerge the yams. Heat the oil to around 175-190°C. You can use a deep-fry thermometer to monitor the temperature or see when the oil is ready when it starts to form tiny bubbles.


Fry the yams:

  • Carefully place the yam slices into the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.

  • Fry the yams until they are golden brown and crispy. This typically takes about 4-6 minutes, but the time may vary depending on the thickness of the yam slices.


Drain and season:

  • Use a slotted spoon or tongs to remove the fried yams from the oil and place them on a plate lined with paper towels to drain excess oil.

  • While the yams are still hot, season with salt.
